Recipe: kartoffelknödel-Potato dumpling

For Monday evening, I made Kartoffelknödel (Potato dumplings) for the side dish. Kartoffelknöde is made of potatoes and always served with meat (grilled chicken, beef, pork, lamb etc) in a plate. 
It's really chewy and Potatoes' original sweetness is amazing. It does match with meat and sausage of course, and you can enjoy them in a soup as well. We were going to buy them but now no need! :D

月曜の夕食にKartoffelknödel(カルトーフェル(=ジャガイモ)・クヌーデル=じゃがいも団子)をサイドディッシュ用に作りました。レストランで肉料理を注文すると(ちゃんと"with Kartoffelknödel"って書いてあります)こういうふうにセットでついてきます。もっちもちで超~~~~おいしい。お餅好きの日本人なら好きになるはず! 肉とも相性バッチリだけど、スープに入れてこれだけ食べてもok. これで買う手間省けました★

2 Large Potatos (Lサイズジャガイモ2)
1 1/2 teaspoons salt ( 小さじ1 1/2)
1 pinch ground nutmeg (ナツメグ1つまみ)
100g x2 all-purpose flour (100g is for in case the dough is too sticky) (小麦粉100g x2)
25g cornstarch (コーンスターチ25g)
1 large egg (Lサイズ1個)
2 slices white bread (I used brown one for color. good quality, not supermarket foam crap) (食パン2枚・安いパサパサしてるのはBOO!!)
1 tablespoon unsalted butter (無塩バター 1テーブルスプーン)
1 tablespoon olive oil (オリーブオイル 1テーブルスプーン)

1 Trim crusts off bread and save them for another use. 

2 Cut bread into 1/2 inch (1,27cm1cm) cubes and fry in butter and oil mixture until golden brown, transfer to paper towel to dry.

 Unpeeled potatoes in large pot of boiling salted water until tender, about 45 minutes.
4 Drain, cool slightly, peel, and cut potatoes into large pieces.

5 Refrigerate until cold, about 30 minutes.
6 Mash potatoes with fork in a large bowl.

Mix in salt and nutmeg. And mix in egg, add 100g flour and cornstarch.

8 Mix bread cubes. Using hands, knead mixture in bowl until smooth dough forms, adding more flour by tablespoonfuls if dough is sticky.

 9Form dough into balls, using 1/4 cupful for each.

10 Working in batches, cook dumplings in large pot of nearly boiling salted water 10-15 minutes (or until dumplings rise to top).

11 Using slotted spoon, transfer dumplings to large bowl.

12 Keep covered with a damp kitchen towel as remaining dumplings are cooked.

13 You should place no more than 4-5 dumplings in your pot at any one time in order to prevent them from sticking together or touching during cooking, which will cause them to fall apart.
